   "text": "The kaiseki is built on Kochi produce, with pesticide-free vegetables from the inn's own garden (co-owner Masayo Nishimura is a certified vegetable sommelier), dashi made daily from bonito, kelp and baby sardines, bonito sashimi and Tosa Akaushi beef, a rare local breed. KI-NRT's highlights were a chawanmushi with brown-rice mochi and fried taro in ankake sauce; for him the meal was memorable but not a top-10 kaiseki, and breakfast is lighter."

   "text": "The spring is the owners' own, struck when they drilled for a bath at their retirement home, an isotonic spring at 24.5°C with slightly opaque golden nigori water that fizzes gently with bicarbonate, neither filtered nor recirculated. Each of the four rooms has an open-air bath over the river where the water is heated only as it enters the tub, which keeps its richer texture, while the public bath heats it in a tank and loses a little."

Ms. Yamasaki at dinner and Ms. Ferchichi at breakfast were engaging and knowledgeable and eager to explain each dish (Ms. Ferchichi's husband is Tunisian and speaks fluent English), attentive without being intrusive. After dinner the owner, Mr. Nishimura, invited KI-NRT to AEL HALL, his own home theatre, for about an hour of opera, jazz and orchestral performances through Altec speakers."

   "text": "The four rooms are named for their vintage speaker systems (Paragon, McIntosh, Altec and Western Electric) and beyond the audio differ little. KI-NRT's 100-square-metre Western Suite is a villa engineered for sound, with Sonus Faber speakers set into a counter aligned with the river horizon and a 1972 Western Electric tube amp so clear he could pinpoint each musician. Floor-to-ceiling glass puts you over the river, and no room has a television."

   "text": "Kohanyu is a secluded plot at the edge of the Monobe River in a remote corner of Kochi, where the water is a deep green framed by lush vegetation and the one man-made structure across the river is mostly hidden by trees, so the view is nearly untouched. The lounge looks straight out at it, with jazz through massive Electro Voice speakers, more than 2,000 CDs to borrow and a deck with its own speakers. Simply gazing out felt restorative."
